Vegetable Lo Mein is a simple and easy to make dish with lots of nutrients from all the vegetables you add. It is also pretty low in calories for the portion size you get.

Ingredients:
Lo Mein Noodles (94g)
1/2 Carrot (63g) - chopped into bite size pieces
Baby corn (87g) - chopped into bite size pieces
Broccoli (75g) - chopped into bite size pieces
1/4 Onion (40g) - diced
1 tspn ginger paste
1 tspn garlic paste
1 tbsp hoison sauce
2 tspn soy sauce
1 tspn sesame oil
1/2 tspn rice vinegar
1 tspn brown sugar
1 tspn canola oil
1 pinch of red peper flakes
salt to taste
Soy Ginger Wonton Strips (optional)
Directions:
Prepare the Lo Mein noodles according to package directions and set aside.
In a small bowl, mix all the ingredients for the sauce. This would include the hoison sauce, soy sauce, sesame oil, rice vinegar and brown sugar.
Heat up a wide rimmed pan or wok. Add the canola oil.
Next, add the ginger paste, garlic paste, onions and red pepper flakes. Saute until the onions turn golden brown.
Add the onions, broccoli and baby corn to the pan.
After the veggies are cooked, add the pre-mixed sauce and noodles and stir until well coated.
Turn oven off before noodles over cook.
You can serve the Lo Mein with some crunchy soy ginger wonton on top. This is completely optional. About 7g of the wonton strips is 32 Calories. This is in addition to the calorie count listed under the Nutrition Information.
