This is the most delicious roasted potatoes that I have ever made. I just had some potatoes laying around and decided to roast them with not a lot of extra calories added. It turned out to be delicious.

Ingredients:
147g (6 or so) Yukon Gold Potatoes
1 Tbsp Canola Oil
1.5 Tspn Garlic Paste
1 Tspn Salt
1 Tspn Pepper
1 Tspn Italian Seasoning
Directions:
Cut the potatoes into thick round slices
Preheat the oven to 375 degrees F.
Heat up a cast iron pan. Add the canola oil.
When the oil heats up, add the garlic paste and mix it around so the garlic oil is spread out across the whole pan.
Place the potatoes on top of the garlic oil in pan so that there is no overlap.
Sprinkle half the salt, pepper and italian seasoning on top of the potatoes.
After it cooks for about 3-5 minutes, or until the bottom of the potatoes are slightly golden brown, flip the potatoes to its other side, add the seasonings and cook for another 3-5 minutes.
This process will crisp up the outside of the potatoes. The insides may not be fully cooked. To fully cook the potatoes, place the entire cast iron pan along with the potatoes in the oven on bake setting for another 5 to 10 minutes.
