I like the flavors in this recipe. There is a lot of spice and not much heat. I had made this dish a few times previously, but this was the first time I made it without the the "extras" to cut down on the calories. I typically add shredded sweet potatoes, vegetable broth and chopped almonds, but when I simplified the recipe, I didn't even miss these.

Ingredients:
1 box Target brand instant Moroccan Couscous
1 can chickpeas
1/2 cup diced canned tomatoes
1/3 onion - chopped into small pieces
1/2 carrot - chopped into small pieces
3 pieces of dried apricot
1 tspn olive oil
2 tspn ginger paste
2 tspn garlic paste
2 tspn curry powder
1 tspn cinnamon
1 tspn oregano
1 tspn paprika
1 tspn turmeric
1 tspn lemon juice
1/4 cup cilantro
4 leaves of min
water
Directions:
Make the couscous according to the package directions and set aside.
Add the oil to a pan and let it heat up.
Add the ginger paste, garlic paste, and chopped onions.
When the onions are golden brown, add the carrots and let it cook until soft
Now add the drained chickpeas and cook for a couple minutes
Add tomatoes, curry powder, cinnamon, oregano, paprika and turmeric
When the everything is well mixed, add enough water to get you "curry" consistency
Let the tagine heat up for 5 minutes. Now add the apricot, lemon juice, cilantro and mint.
Let it heat up for another couple minutes before turning off the stove.
Serve the tagine with the prepared couscous.
