This is a simple recipe that can be made in no time. So its a favorite for weeknights. Although I didn't have lettuce when I made this recipe, it can be added for no extra calories to give the tacos an extra crunch and freshness.

Ingredients:
3 Taco Shells
80g (about 6 Tbsp) Canned Black Beans - drained and rinsed
1 Tspn Cumin
1 Tspn Salt
28g (1oz) White Cheddar (or regular sharp cheddar) - shredded
1.5 Tbsp Taco Sauce
50g (5-6) Cherry Tomatoes - sliced
2 Tbsp Sour Cream
1/2 Cup Shredded Lettuce
Directions:
Mix the black beans, cumin and salt and microwave for 2 minutes.
Toast the taco shells in the oven for a few minutes to make them crispy.
Add the black beans, taco sauce, tomatoes, cheese, sour cream and lettuce.
